* 1/2 tbsp baking powder
* 1tsp baking soda

Wet ingredients:
* 1/2 cup evap or fresh milk
* 1/2 cup hot water
* 1 large room temp egg
* 1 tbsp vanilla
* 1 tbsp black coffee
* 1/4 cup vegetable oil

Toppings:
* 1/4 or 1/2 cup of choco chips

Procedure:

  1. Preheat the oven to 180 degrees Celcius.
  2. Prepare the cupcake trays and line them with cupcake liners.
  3. On a large bowl, sift all dry ingredients except for white sugar. Then, set aside.
  4. In a separate bowl, beat the egg.
  5. Add the milk and oil as well as the white sugar. Mix well.
  6. Once the wet mixture is combined, add the dry ingredients and mix well until it's combined.
  7. Add the black coffee to the hot water and mix well.
  8. Pour the hot coffee mixture into the batter and it will become a runny mixture.
  9. Add the vanilla and mix until no lumps are visible.
  10. Use a strainer and pour the mixture to make sure it's smooth.
  11. Pour the mixture 3/4 full on the cupcake liners giving it space to rise when baked.
  12. Add some choco chips on top of the cupcake mixture to add flavors and moisture.
  13. Bake it for 18 minutes or until the toothpick comes out clean and you can enjoy it with your family.
