Boiled icing



Boiled icing recipe:

Yield: 2 dozen 3oz cupcakes or 8"4 inch round cake.

* 4 egg whites
* 1/2 cup of water
* 2 cups white sugar
* 1tsp  cream of Tatar

Procedure:
  1. In a saucepan, pour the 2 cups of sugar and water.
  2. Bring to boil in low heat and don't stir. 
  3. Check the consistency of the melted sugar until it forms a soft ball when placing a small amount of melted sugar in cold water. The sugar must not harden, it should be somewhat chewy and can form a soft ball.
  4. At the same time, while melting the sugar, you can beat the egg whites using an electric mixer at high speed. 
  5. As soon as the egg whites form bubbles, you can add the cream of tartar and continue to beat for 2-3 minutes.
  6. Now we can slowly pour the boiling sugar on the egg whites while beating at number 2 or 3 on your electric mixer. Pour the sugar slowly to avoid burning.
  7. Once all sugar has been poured on the egg whites you can bring the speed to the highest and continue beating for at least 7 minutes or until you get the soft peaks.
  8. You're done and you can start decorating your cupcakes or cakes.
